Pack A Snack

Manic Mondays in households with school going children start with, “what to pack for a snack”. Here’s how to tickle the taste buds during a 10 minute break!!

Cream crackers with carrot and cheese

Ingredients:

1. Cream crackers – 6 or 8 no.s
2. Carrot – half grated fine
3. Cheese – mozzarella or soft cheese grated
4. Green chilli – 1 small
5. Spring onion – 1 stalk only leaf cut small
6. Salt to taste
7. Oil – 2 tsp
8. Garlic – 1 small pod fine paste

Method:

1. Heat oil and add green chilli
2. Add garlic paste and add carrot in a minute.
3. Add salt and spring onion and cook till soft
4. On a cream cracker add a little cheese and carrot together.
5. On a hot dosa tawa place the cracker till cheese melts.
6. Remove and place in snack box

Marie muse

Ingredients:

1. Marie biscuits – 8 no.s
2. Tinned peach – 1 tin
3. Whipped Cream - 1 tube

Method:

1. Cut peaches into halves
2. Place peach without much sugar syrup on Marie biscuits
3. Place a dollop of whipped cream on the peach.


Chicken spread sandwiches

Ingredients:

1. Chicken – 1 breast piece
2. Onion – 1 small cut fine
3. Tomato – 1/2 med sized cut small
4. Green chillies – 2 chopped fine
5. Ginger garlic paste – 1 tsp
6. Table butter – 100 gm
7. Salt to taste
8. Oil – 1 tbsp
9. Sandwich bread – 4 slices
10. Fennel seeds or saunf – 1 tsp
11. Parsley – half a handful chopped fine.

Method:

1. Butter all slices of bread.
2. In a wok/kadai heat oil and add fennel seeds and green chillies.
3. Add onion when fennel turns golden. Fry till onion is light brown.
4. Add ginger garlic paste. And fry till raw smell disappears.
5. Add tomato and salt and fry. Add chicken and half a tumbler water.
6. Cook till chicken breast is soft and masala is thick and sticky.
7. Shred chicken and grind in a mixie. Mix fresh parsley leaves
8. Apply paste to the bread.
9. Cut into triangles

Corn and macaroni delight

Ingredients:

1. Corn – 1 cup (Sweet corn kernels shelled variety)
2. Macaroni – 1 cup
3. Chat masala – 1 tsp
4. Garam masala – 1 tsp
5. Salt for taste
6. Coriander – half a handful
7. Lemon – juice of 1 half

Method:

1. Immerse corn kernels in just boiled water for a minute. Add half tsp of salt to water.
2. Cook macaroni in water till soft. Add 1 tsp salt to the water. Add a little oil so that macaroni doesn’t stick together.
3. Strain both and mix coriander leaves, chat masala, garam masala and lemon juice


Banana and cashew caramel

Ingredients:

1. Banana – 2 no.s (cut into halves lengthwise)
2. Cashew – 8 whole (break into half)
3. Ghee – 3 tsp
4. Sugar – 2 tbsp

Method:

1. Fry cashew in ghee and keep aside.
2. Caramel - In a bowl melt sugar on a slow flame. When sugar gets brown, remove from flame and add 2 tsp of water slowly. Keep on flame and brown till golden in colour. Do not make it too dark as it would be very bitter.
3. On the banana halves add caramel and cashew and cool.
