Most of us Indians love Chinese food(made in India ishtyle!!) I make my own version of it. The easy way to a fake Chinese dinner!!
Veg Schezwan Noodles
Ingredients:
1. Chings egg noodles – 1 packet
2. Soya sauce – 1 tbsp
3. Schezwan ready sauce – 2 tbsp
4. Ajinomoto – ¼ tsp(optional)
5. Vegetables cut fine and lengthwise: Carrot – ¼ cup; Cabbage – ¼ cup, Yellow capsicum – ¼ cup, onions – ½ cup, Spring onion – 3 stalks, Green chilli – 1 long
6. Oil – 1 ½ tbsp
7. Garlic – 1 crushed
8. Salt to taste
Method:
1. For noodles – Prepare as per instructions on packet
2. In a wok heat oil and add crushed garlic.
3. As soon as smell of garlic emanates, add onion and green chilli and fry till transparent
4. Add all vegetables except spring onion and mix in sauces, salt and ajinomoto.
5. Cook till soft and then add spring onions.
6. Add noodles and serve hot.
Chinese soup with Maggi cream of chicken
Ingredients:
1. Maggi cream of chicken – 1 packet
2. Oats – 2 tbsp
3. Leek – 1 stalk
4. Garlic – 2 chopped fine
5. Carrot grated – 1 small
6. Pepper – ¼ tsp
7. Soya sauce – 1 tsp
8. Ajinomoto – 1 pinch (optional)
9. Chicken stock – ½ tsp
10. Egg white beaten – 1
11. Spring onion – 1 tbsp chopped fine
Method:
1. Boil vegetables with oats, chicken stock, soya sauce and ajinomoto in 3 cups of water.
2. When the oats and vegetables are cooked add the contents of the packet, previously mixed in half cup of water.
3. Add egg white through a strainer when the soup is boiling.
4. Garnish with spring onion
Egg and Vegetable Spring rolls
Ingredients:
1. Egg – 3 no.s soft scrambled with pepper and salt
2. Vegetables chopped fine – Ginger – 1 ½ tsp; Garlic – 1 ½ tsp; Red pepper – 1; Cabbage – ¾ cup; Spring onion – 4 stalks
3. Soya sauce – 1 tsp
4. Green chilli sauce – 1 tsp
5. Chicken stock – 1 tsp
6. Salt to taste
7. Oil – 1 tbsp
8. Rice paper sheets – 25 no.s
Method:
:1. Heat oil in a wok and add the ginger garlic.
2. When the aroma starts coming add cabbage and red pepper along with the sauces, stock and salt if necessary. Next add spring onion.
3. When it is cooked and liquid has dried up add the egg and mix.
4. Take off flame and cool
5. Roll into rice paper sheets and fry
Chicken strips in Manchurian sauce
Ingredients:
1. Chicken strips – 500 gm
2. Vegetables chopped fine – Garlic – 8 pods; Ginger – 2 inch piece; Green chillies – 2, spring onions – 3 stalks
3. Capsicum – cut into rectangles
4. Onion – 1 cut into 4 halves
5. Oil – 2 tbsp
6. Soya sauce – 1 tbsp
7. Tomato sauce – 1 tbsp
8. Maida – ½ cup
9. Corn flour – 2 tbsp
10. Salt to taste
11. Ajinomoto – ¼ tsp
Method:
1. Marinade chicken with salt
2. Make a batter of maida and cornflour and coat chicken pieces and deep fry
3. Heat oil in a wok and add ginger, garlic, green chillies. When pungent aroma emanates, add onions and capsicum and stir fry till onions are transparent.
4. Add sauces and stir fry. Add ajinomoto and salt and cook for a minute
5. Add chicken and fry for a minute. Garnish with spring onions.
6. Serve hot.
